Mixing Bowl: Recipes!


Looks like we’ve got you covered. We have a main dish, a side, a salad, a dessert and a midnight snack - all from Heart & Keeper contributors!!


Crockpot Chicken Chili

Use a crockpot/slow cooker liner for easy cleanup or prepare by coating with nonstick cooking spray.


Ingredients:

  • 1 ½ lbs frozen, boneless, whole, skinless chicken breast

  • 1 large can (30 oz) or 2 (15oz) cans chili beans (put can with sauce in)

  • 1 (15 oz) can of kidney beans (put can with sauce in)

  • 1 (15oz) can of black beans (put can with sauce in)

  • 2 (12-15 oz) cans of corn (drained)

  • 1 envelope chili seasoning mix

  • Approximately 36 oz V8 juice (do not use low sodium, use REGULAR)

  • DO NOT THAW CHICKEN – use frozen

Directions:

Put all ingredients into crockpot. 

Cook on low for 8-9 hours. 

Remove chicken (after cooked) shred with forks and return to crockpot, stir and serve. 

Can be served with shredded cheese and tortilla chips.


Potato Ham Casserole

Prepare a 9x13 inch dish by coating with nonstick cooking spray

Preheat oven to 350 degrees


Ingredients:

  • 2 lbs. Southern style hash browns

  • 1 can cream of mushroom soup

  • 1 pint sour cream

  • 2 sm cans diced green chillies

  • ½ cup chopped onion

  • 2 cups shredded cheddar cheese

  • ½ cup melted butter

  • 1 ½ lbs. cubed ham (bite size)

  • Topping:

  • 2 cups corn flakes

  • ½ cup melted butter

Directions:

Combine all your ingredients (except your toppings) in your prepared 9x13 inch pan.

Top with cornflakes and drizzle butter over the top.

Bake for 50 minutes or until golden brown.


Foo Foo Salad

“My sister (Annette) introduced this salad to our family gatherings at least 30 years ago. From the first try we all agreed, young and old, it was a hit! I have a copy of this recipe with my precious Mom’s handwriting, which I cherish! When I make the salad now, my heart and mind are flooded with so many comforting thoughts and memories of times sharing this yummy salad together with those who are now missed and loved.”


Ingredients:

  • 1 box pistachio instant pudding

  • 9oz. whipped topping

  • 16 0z. Crushed pineapple

  • 1 cup mini marshmallows

  • ½ cup chopped nuts

Directions:

Fold dry pudding mix into whipped topping, add pineapple.

Gradually fold in the marshmallows and nuts.


Tips & suggestions:

You can make this recipe ahead of time which gives the marshmallows time to soften. The nuts can be omitted if desired.

Double the recipe for a crowd, it never goes to waste ☺


Birthday Cake Rice Krispie Treats

Ingredients:

  • 5 Tablespoons butter

  • 10oz mini marshmallows

  • 6 cups Rice Krispies

  • 1/3 Cup dry funfetti cake mix

  • 1/4 Cup rainbow sprinkles

Filling:

  • ¼ Cup softened butter

  • 4oz softened cream cheese

  • 1 teaspoon vanilla

  • 2 ½ cups powered sugar


Directions:

Line a 10x15inch pan with foil and spray lightly with cooking spray set aside.

In a large pot melt butter, add in the marshmallows stir until melted. Remove from heat and add dry cake mix. Add the rice krispies and sprinkles, mix well.

Press in the prepared pan and let cool.

To make filling cream butter and cream cheese, add vanilla and powered sugar mix well til smooth.

Cut Krispies in half vertically, spread filling evenly over half of the krispies then top with other half and press down lightly. Cut into squares…Kids love them and even us big kids do...Enjoy!



Rhodes Bake N Serv Cinnamon Rolls

Nothing speaks comfort like a warm cinnamon roll. Homemade are of course best,

but the next best are home-baked. Rhodes Bake N Serv Cinnamon Rolls with

cream cheese frosting can be found in the freezer section at Wal-mart, 12rolls /

bag and less than $4! You can even decide how many you want to make at a time.


Thawing, rising and baking these yeast rolls are all it takes to enjoy a taste

of comfort. You can even add more cream cheese to the frosting if desired. They also have some great recipes on their website.
