Soft Pumpkin Spiced Cookies from TJ Seabert

Ingredients:

  • 1 box Pumpkin Spice Cake Mix (it can also be a pumpkin cake mix or a spice cake mix, whatever you have on hand.)

  • 1 can (15 oz.) Pumpkin Pie Filling (not 100% pumpkin, it’s a little bit thicker and doesn’t have spices in it.)

Keep these two ingredients on hand during the fall and it will be your go to easy- to- make at spur of the moment recipe!


Directions:

  1. Preheat oven to 350 degrees.

  2. Prepare cookie sheet with parchment paper or a silpat mat, it prevents the bottoms of the cookies from burning.

  3. Mix together by hand or with a mixer the cake mix and the Pumpkin Pie Filling then drop by spoonful onto a cookie sheet and bake for 12-14 minutes. Dust with powdered sugar or glaze them after they have completely cooled.


Glaze:

Add powdered sugar to ¼ cup of water to desired consistency using a whisk or fork (I prefer a whisk as it helps dissolve any clumps in the powdered sugar.) Add and mix zest from an orange to your liking. Drizzle over your cookie after it has completely cooled. Enjoy!
